Student cooking: Easy five-ingredient lunches

Are you tired of skipping lunch or grabbing a quick (and expensive!) takeaway between lectures? As a busy student always on the go, it can be difficult to find the time to prepare a healthy and delicious lunch. Difficult - but not impossible.

Spicy mozzarella pasta 

High in protein and flavour, this dish is about to become a firm favourite! Ingredients include chicken, sundried tomatoes, mozzarella (or any other cheese), cream and pasta. Add a few spices for extra flavour, and you're good to go.

Crispy chickpea sub-sandwich 

When the hunger bug bites, this vegan-friendly chickpea sub-sandwich is definitely one to consider. With a splash of beetroot, a smear of hummus, 10 minutes to prep and 10 minutes to cook, this incredibly crispy vegan delight is an easy meal you’ll be making on the regular.

Using only four simple ingredients, it’s no wonder this dish is so popular. With spaghetti, black pepper, parmesan, butter, and a total of 15 minutes, this dish is remarkably simple, tasty and perfect if you’re in a hurry. Add in a bit of spinach and your protein of choice for an extra touch.

Everyone loves a good curry. Needing only curry paste (easily found at any grocer), butternut squash (or meat if that’s your thing), 1 red pepper and coconut milk, you’ll be enjoying a delicious homemade curry in under 30 minutes.
